After a big storm my neighbour’s worse for wear leaning peach tree which needed a good prune finally split and keeled over. She already had a second branch producing from the now cut trunk and the fallen trunk has been turned into a garden bed hedge. As for the green unripe peaches, they can actually be pickled like gherkins. But I chose to ripen my boxes of. I simply placed the hard green peaches in a sealed cardboard box and covered with a blanket to trap the gases. The fruit gives off gasses that continue to ripen well after coming off the tree. Some took a week and others three weeks. I just gave a quick check every couple of days and picked out the now peachy and yellow soft ones for bulk food preparation. Peaches are ready to be picked around midsummer (Dec 21st in the Southern and Jun 21st in the Northern hemispheres respectively) From the chapter 'Storage' The peaches give off ethylene gas, which is a natural hormone present in fruits and vegetables.
