Rich healthy golden large and bite sized saffron soul cakes, vegan and enriched with pimento spice Essentially a basic gluten free cake mix made heavy & with saffron & pimento/chai spice mix. Pimento pumpkin spiced sugar skull and mini cakes with sultana details. With extra virgin olive oil replacing butter and coconut sugar replacing sugarcane, dashed with golden saffron. This year I also used a vegan egg replacer. Perfect yum and fun for Samhain and or a Dia Des Los Muertos feast. I even used green jay bird tealight holders to carry the smaller soul cakes, along with crystal skulls & green paper flowers in the serving up (links at the end of this post) From Chapter 'Cake' What I used;
