A baked pudding and cake in one with peaches, cinnamon and almond icing Brown sugar was used throughout both the cake and on the icing along with cinnamon sprinkled top on this cake, and the flavors pair together nicely. What better way to celebrate midsummer than ripe peaches into a bake. Eggs are not necessary and 2 to 3 heaped tablespoons of ground flaxseeds mixed into half a cup of water were used instead and is what us vegans call vegan 'egg'. The flax is not only better due to not being full of non compatible proteins for long term inner health but flax is also perfect in its chains of omegas, with 2 heaped tablespoons a day one meets their EFA needs whilst adding to the daily fiber account. Once vegan egg is mixed it is important to let sit and thicken as the ground flaxseed will expand. I also replace oil in the same quantities but in homemade applesauce at times but in this recipe I had run out at the time and just used sunflower oil mind you only 1/4 cup at the time.
