Bright Blackberry and Borage Chocolate Cupcakes to Bring in Spring’s Imbolc, in 2020... A couple of years back I made another vegan, pink iced cake using Beetroot to flavour, flaxs egg to bind with applesauce instead of oil as a low fat option. The final pink icing was sprinkled over with Blue cornflower petals from the summer blooms. This year I have used melted down nuttex vegan nut spread instead of oil or applesauce, and still will flax egg to bind in the wet mix. With the dry I just mixed up a basic chocolate, self raising flour and baking soda mix with caster sugar. The icing this time was topped with petals of fresh borage flowers and the icing was made with the same nuttex spread melted down for a frosting effect and flavoured with rose water for a musky confection taste. Beetroot juice was used for coloring both cake batter in the wet mix and in the icing and another twist in the icing mix was actually mixing through frozen blackberry’s through prior to serving up onto the cupcakes. I would have to say, that these would have to be my best chocolate cupcakes yet and I have added a couple of links on flax egg and even applesauce to omit for oil at the end of this post for some specifics. But for now please enjoy the pictures of this year’s result. From the chapter 'Cupcake' Wet mix A couple tablespoons of Flaxmeal mixed into 1/2 cup of water and set aside to expand whilst a couple of tablespoons of Nuttex was melted and mixed into. 1/2 cup of unsweetened almond milk was mixed in. Added to dry mix Dry mix Self raising flour, caster sugar, cocoa and baking soda. Batter Color Once combined I added beetroot juice to color the chocolate cake batter into a red velvet. Baked
Rosewater red Blackberry and Borage Icing A couple of tablespoons of Nuttex was melted and mixed into 1 cup of icing, dash of rosewater and beetroot juice or as desired. I used the same unsweetened almond milk to further liquefy the icing before stirring through some frozen blackberry's. Cupcakes where topped with the Icing, before sprinkling over with Borage flowers.
